Lipase is a water soluble enzyme that catalyzes the hydrolysis of ester bonds in water insoluble, lipid substrates and is a glycoprotein. Lipase (triacylglycerol acyl hydrolase) fulfills a key function in dietary fat absorption by hydrolysing triglycerides into diglycerides and subsequently into monoglycerides and free fatty acids. Pancreatic enzymes have been most studied as part of the treatment for Celiac Disease.
